Strawberry Muffins

Cook Time: 25 minutes + 10 minutes to cool
Notes: If you use frozen strawberries, let them thaw for about an hour so they aren’t too mushy when you chop them.

Ingredients:

1/4 cup butter
1/2 cup milk
1 egg
1 tsp vanilla
1/2 tsp salt
2 tsp baking powder
1/2 cup sugar
1 3/4 cups all-purpose flour
1 cup chopped strawberries

1. Preheat oven to 375 degrees F. Oil an 8-cup muffin tin, use paper liners, or use these babies.

2. In a small bowl, combine butter, milk, egg, and vanilla. Beat lightly. In a large bowl, mix flour, salt, baking powder, and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.

3. Fill muffin cups and sprinkle a little sugar on top of each muffin. Bake at 375 for 25 minutes, or until tops bounce back from the touch. Cool 10 minutes and remove from the pan.

Reaction: I served this to my roommates and a guest in our home, and they all loved the flavor. One of my roommates tried the batter, and was skeptical, but really like the final result. I would say this tastes a little like shortcake, just with the strawberries baked in.

Group Size: This would be enough for 8 people to have 1 muffin each, or 4 people to have 2 each

Group Involvement: I made these by myself, but if I had other people involved, I would have 1 person measure out the dry ingrediants, 1 person measure out the wet ingrediants, and another person mix everything together and fill up the muffin cups.

Alterations: The original recipe called for oil instead of butter, but I hate the flavor that gives to baked goods. Sprinkling sugar on top of the muffins is also my addition. Someone at allrecipes mentioned that cinnamon is a really good addition, but one of my roommates is allergic.

If I Made This Again: I would try using a little less sugar, just to get a more short-cakey taste. But just a little less.

Leftovers: I put them in a plastic freezer bag and stuck them in the freezer. Whenever I want one, I pop it in the microwave and nuke it on high for about 10 seconds.
